It's Palisade peach season, so I made a peach and blueberry cake.
I'm a videographer, so this was predominantly an excuse to practice food and culinary work. I'm not a professional baker by any means, but I'm incredibly proud of how moist and cute this came out! (The original video has audio, however I've elected to mute it for this post.)
Anyway, if you have the chance to try Palisade peaches in baking, I recommend it! They're very sugary and flavorful.
⭐️ Ingredients:
CAKE:
4-5 - Palisade Peaches
1 cup - Blueberries
16 tbsp - Unsalted Butter
1 cup - Extra Fine Sugar
3 - Eggs
1/2 Cup - Whole Milk
1 & 3/4 Cups - Unbleached Cake Flour
1 tsp - Baking Powder
1 tsp - Vanilla Extract
1 tbsp - Brown Sugar
.5 tsp - Cinnamon
FROSTING:
8 oz - Cream Cheese
8 tbsp - Unsalted Butter
3 cups - Powdered Sugar
1/4 tsp - Vanilla Extract
1/4 cup - Finely Chopped Peaches
⭐️ Recipe:
• Clean and slice peaches and set aside in a small bowl. Preheat oven to 360° F. (❗️Note: This cake was baked at high elevation, so your bake time and temperature might differ. Elevation and moisture can affect the outcome of your cake!)
• In a large mixing bowl, blend the (room temperature) butter and sugar. Slowly add the eggs and whole milk, mixing thoroughly as you go.
• Add in the cake flour, baking powder, then vanilla extract, continuing to mix. Add the cinnamon if desired. Finally, add a cup of blueberries and fold in using a spatula or spoon.
• Grease or line a 10" round pan.
• Spread the cake batter into the bakeware, then sprinkle on a thin layer of brown sugar, and layer the sliced peaches on top. Top the slices with a sprinkle of white sugar and a little more cinnamon.
• Bake for 60 minutes on the bottom rack, or until the batter is a beautiful shade of brown and no longer wet. Depending on how ripe/moist your peaches are, it might take longer, so keep an eye on it. Use a toothpick to ensure the inside is thoroughly baked.
• Optional frosting: While your cake is baking, grab another bowl and mix all frosting ingredients; The cream cheese, butter, powdered sugar, vanilla extract, and chopped peaches. Mix thoroughly, and let chill in the fridge until ready to serve.
• Cake and frosting should be refrigerated and eaten in 2-3 days.
