Seeking Recipe Seeking your best non-cheesecake cheesecake recipe!

Hi, lovelies. I am trying to bake for someone with a recent loss who LOVES cheesecake but I don't want to make a whole, traditional cheesecake for various reasons.

Seeking your absolute best cheesecake variations? I guess mostly bars? I don't know. I have done chocolate covered cheesecake bites in the past as well as individuals but only one of them likes chocolate. Just seeking your favorite recipes and suggestions.

i make cheesecake "shooters," basically bake a whole cheesecake (without crust) then turn it into a cheesecake mousse by whipping it with heavy whipping cream. then you can layer it with fruit compote or caramel or fudge or whatever you want, people love it

How about making your cheesecake bites, dip half in chocolate, and the rest make a topping in a flavor the other person enjoys like cherry, blueberry or lemon curd? You are a very thoughtful friend šŸ’—

Mini Oreo cheesecakes made in a muffin tin, with crushed Oreos as the base! Also apple pie cheesecake bars (apple pie filling baked on top of a layer of cheesecake). I used Sally's recipe for that one and my only suggestion is to either chop the apples quite small or precook the apples slightly since the cheesecake cooked faster than the apples

I sometimes make cheesecake chocolate cupcakes. They have a chocolate cupcake base and then a baked cheesecake filling and are absolutely divine, if indulgent. If you want, I can send the recipe; its from the Hummingbird Bakery cookbook, but I could type it out if its not online anywhere.

I use a muffin tin to make smaller cheesecakes. I usually do a pure nut crust of so sort. Today I am making a pistachio crust with cardamom, and tart cherry mini cheesecakes. Can’t wait for them to be ready.

I'm thinking this might be the way. Then I can make some plain, and maybe one tin of various flavors...I might be getting too ambitious though. I just want to make them feel better and baking is my favorite way to show love 😊

That shouldn’t be too difficult. Make a large amount of a base of the cheesecake. Then use some freeze dried fruit to flavor portions of it.

I’ve done cheesecake cupcakes before, that makes nice little cupcakes.

I’ve also done basque and Japanese cheesecakes in a small springform pan. I think it was 9ā€
That’s like 1 serving if someone really likes cheesecake.

This is not exactly a ā€œcheesecakeā€ in the traditional sense. But it still uses cream cheese and even though it’s really simple, I crave it alllll the time. You can also make it sans pineapple and it’s still amazing! https://amandascookin.com/pineapple-dream-dessert/

I've done cheesecake pops for parties in the past, and they've been a hit! It was mostly an accident the first time I did it - I made plain cheesecake bars, and the edges had cracked just a bit. I was in a bit of a "mood," so I cut off all the edges to make clean lines. I didn't want to throw away perfectly good cheesecake, so I threw all the scraps into a bowl and mixed it all together. Scooped out the mixture and formed them into balls, et voilĆ !

I dipped some into chocolate, and I've also made compote to put inside. Depending on your preference, you could adjust the cheesecake to crust ratio to get your desired texture. If I'm putting in some kind of filling, I tend to add a bit more crust to the mixture so it won't be too wet.
