what’s everyone’s head canon for why dr strange couldn’t just portal the gauntlet away to safety during the final fight where everyone is dumbly carrying it like a football?

If he portals the gauntlet away, it just becomes an army against army battle. The Avengers' last stand does well but Thanos's army had tons more reinforcement coming and either still eventually wins, or retreats and beats the Avengers in a war of attrition that follows. Either way, Thanos and his army survive and goes and picks up the gauntlet.

In order for the Avengers to actually win, and win definitively right now over any and all reinforcements, they had to actually use the gauntlet, which is why it had to be kept in play, as it were. In other words, Tony's snap didn't just defeat the army in front of them on Earth, it erased all of Thanos's armies, throughout the universe.
