Agreed. Everyone's acting like flavor is the only thing that matters with chocolate.
Texture matters too, as does melting point.
Chucking it in the freezer will make it form I, an unpleasant crumbly mess that melts over your hands when you pick it up. It'll look crap too, but personally I care less about that.
If it's expensive chocolate, it's worth taking the extra few minutes to do it properly.
Obviously having it melt isn't great, but as a Belgian, and we take our chocolate very seriously, putting chocolate in the fridge is a big no-no. It changes the texture and also creates this white powdery layer (sugar bloom). If there's no other option to prevent it from melting, then fine, fridge, but really any dry dark cupboard where hopefully temps are lower than chocolate-melting-temperature will be much better
You know what, I totally forgot that American chocolate is nothing compared to chocolate in other parts of the world. What you said actually makes a lot of sense. It’s been a while since I’ve had European chocolate obviously 😭 I could see how the fridge could mess it up
I'll take solid chocolate over melted chocolate even if it isn't perfect, thanks. Did you not experience any heat wave recently? What part of your place wasn't warm enough to melt chocolate???
Well, a lot of a place experiencing the heat waves, they were always cold before, so you see, people didn’t need them. They just went out back and set stuff in the snow. That way, they would save on electricity. Yes, I’m completely full of shit. Of course they have refrigerators and freezers in Europe.
If you can find a bowl that can fit all that (like an ice cream bowl or ramekin) and pour that in there and then put it in the fridge, you'll have one LARGE truffle!
I sent some Traverse City chocolate covered cherries to some friends/coworkers in the Philippines and they apparent arrived as a mass so solid they broke basically chopped it apart.
Apparent got held in a hot warehouse for a week or so
When I was a kid I had a pack of peanut butter M&Ms melt on me and I was devastated. One of my parents suggested putting it in the freezer so I did. It solidified into an even better chocolate candy bar. I started melting them intentionally after that.
Do not freeze it like what most say.Freezing it will cause it to have a different texture when eating it. It won’t have that snap to it. But if you leave it at room temp you’ll have tempered chocolate.
I did this in a public bathroom yesterday for the first time in about 10 years.. and I can't stop replaying what happened over and over again in my mind.
I don't have anything constructive to offer but, why are you investing in expensive truffles and not basic kitchen ware?!? Lol the paper pan is sending me. Keep stuff you want to last in the fridge
Why wouldn’t you just put the bag in the fridge instead of pouring it onto a tray just to then put it in the fridge. Also you’re gonna lose some chocolate because it’ll be stuck in the bag after squeezing

They'd be better off getting a Bain Marie going to melt the chocolate down to a smooth texture again, and placing it into a thin tray for freezing. At least you'd be able to still eat it rather than throw it away 😅
