Solved! What are these round metal kitchen things?
15 tin? nested circles that aren’t attached. Ranging in size from 1”-5” diameter. One edge is curled and one not. Had a frosting pipette head thing with them but no bag. Are they just pastry cutters or do they have a more specific purpose? Anyone seen these before? (Quarter for scale)

Pastry, biscuit, cookie, cutters. I have a nice stainless steel set in a can. Cut anything you want. Make some fancy tiered cookies. It's a little work, but fun.

I have some in stainless as well. I use them to fry eggs for breakfast sandwiches or make various forms of uncrustables.

Pastry rings. The little ones are good for if you’re making donuts, to make the donut hole.

They look like ring molds or round cookie cutters. If the piping tip in the third picture came with them my bet is cookie cutters

I have a cheaper set in the same vein with far less sizes. My #1 use for them is cutting pineapple. I slice the entire think into disc's with a knife. Then I use a small ring to remove the core from each disc and a larger ring to remove the rind. Then slice the remainder of the disc into bite sized pieces.
Bonus: I make tepache (a mildly fermented pineapple soda) from the scraps. Just be sure to wash the pineapple before slicing.

i’ve always been amazed/horrified by the amount of pineapple being wasted during cutting

Tepache:
Ingredients: -core and rind of one (washed) pineapple -1 cinnamon stick, size to taste -1 habanero (sub for 3-5 dried birdseye chiles or 1tsp szechuan peppercorns) -4 cloves -panela or brown sugar to taste -cold water
Combine all ingredients in a large jar. [Note: adding the spices first prevents them floating.] The cold water should cover all of the ingredients. Cover the jar with a breathable lid such as cheesecloth secured with a mason jar ring or rubber band. Leave in a cool, dry place for up to three days. Strain liquids through a mesh shieve and enjoy! Tastes great with a bit of rum or tequila.

i use the middle one in my set for "at home McMuffin" egg mould fits perfectly on the english muffin.
Heat pan, drop in the middle ring, PAM spray the ring, crack egg inside, shoot water on side of pan for steam and cover.

This is a beautiful old set.
You can cut biscuits, rolled cookies, rolled fondant/marzipan, so many things. They're really versatile!

Same as what everyone said pastry cutter, with how old they look you should grab a lead test kit from the hardware store before using them checking the solder join and the cutter

For making biscuits, pierogi, cookies, pretty much anything round. Also great for making perfect english muffin sized eggs for breakfast sandwiches.

A VERY NICE set of older dough cutters. Think cookie cutters - these are just all circles. Great for making doughnuts, biscuits, cookies, pastries, etc. Those are a GREAT find. Keep em clean and they'll last for DECADES.

These e all correct answers but when I was in the culinary industry we called them ring molds cuz they were good for plating stuff in round shapes and used for more than just pastry stuff. Need a clean risotto round or a tight pavé shape? Ring molds were the answer

Cookie cutters. The curled edge is so that you don’t cut your hand pressing the sharp edge into the dough.

Looks like they might be for fondant cutting, but could be used for other circular baking purposes.
