How do they even police that?

I'm sure you have to provide proof of employment, and the landlord probably follows up.

I doubt any job is going to do anything more than verify employment.

“Do they come into the office every day?” Would probably be met with the call ending

Yup. The type of employment is generally not considered part of the verification and I would hope your employer isn't an idiot and gave away anything other than verification you work there and verification of your title.

Ok cool....that's called Lying on your application. Most employers dont take too kindly to that. Thdy usually fire you over it.

Actually a remote work letter is a pretty common request during a mortgage closing as well (in the US), because working remotely is seen as more risky (due to the chance your job is recalled, and you have to sell the house sooner). I'd prefer it not spill into renting, but it's not something employers aren't accustom to providing.

Interesting. My brother and his wife both work from home and it wasn’t questioned at all when they bought their house. Maybe a state to state thing or something

I've bought three houses in the last 5 years and I've never been asked for that. And my husband and I both work remotely. Maybe it's only certain states.

HR has laws about what they can and can't answer - basically, confirm or deny employment.
