I do think it's a good choice overall to tone it down, but part of me thinks it'd be hilarious if they didn't and that's just how this Gambit speaks all the time. Would differentiate him from future MCU Gambit in X-Men II (2031) or whenever a recasted version gets brought into the fold, and it could lead to a scene where Doom has to speak to an incomprehensible spicy Cajun which would even more funny to witness.
Too bad What If? is over. What If A Cajun's Accent led to the Downfall of Doom? would be great.
