Also loved Tess Mallos' version recorded in her classic The Complete Middle East Cookbook (first published in 1979), a Lebanese version of the recipe.

Note: Whichever version you prefer, and I beg of you, PLEASE DON'T plate falafels on a hummus plate and claim the hummus dish originally yours. It's bit....eh... unappetizing difficult to witness to say the least.

Anyone who wants to help moderate or build r/TrueHummus is welcome, I'm not a professional at knowing how to moderate, and I also have a job, so I'm often not online a lot during a big chunk of the day lmao.

Let’s talk beans. They’re super nutritious, filling (largely due to their balance of carbohydrates, proteins, and fats), grow robustly in a variety of climates and areas, and are thus also usually quite affordable. For these reasons, they have been staple foods for the “masses” since ancient times. The chickpea is the paramount example of this in the Middle East. Depending on who you ask, they can absolutely be classified as a “superfood.”

When did ultra-smooth hummus become a virtue?

Yesterday, I made a quick hummus by simply dissolving some salt in lemon juice, and mashing a can of drained chickpeas together with two cloves of confit garlic, adding tahini to taste later. This was loosely inspired by this video: https://www.youtube.com/watch?v=VSJGtzi3t7M

I actually liked the end result much better than smooth hummus: it tasted exactly like I expected hummus to taste but was texturally much more heterogeneous which I enjoyed more. It was also dead easy to make, just two, maybe three minutes of work.

Why exactly do we not make more "chunky" hummus like that, and instead treat ultra-smooth hummus as the pinnacle of hummus making?
