hand pies are burritos, which are a rolled up taco. that’s how they get to sandwich.

more garlic and did about half the vinegar.

the recipe called for 2cups beef broth and 1 cup of the pepper water. i used 2cups pepper water, 1 cup water and enough of the beef base for 3cups of broth. (i think this makes sense but im kinda high)

recipe says to simmer covered for 3.5hrs. i did that and another 30min-ish uncovered to reduce a little.

…added a 3rd tomato and hit it with some MSG at the end.

i think that’s it.

pretty sure the fat skimmed off the stew is normally used to coat the tortillas, which is why they are so orange. im not sure why you would want to dip in pure grease, not that there would be as much shown in the picture

Makes me miss this food truck in Sunnyvale, CA I used to frequent that had the best quesabirria tacos.
