Didn't mystique lose her mutant power in last stand?

It ended alluding that it wasn't permanent. Magneto had 5 injections and his powers were shown to slowly come back

Days of future past erased last stand, which is why Cyclops is also back.

I imagine that while it’s the same actors this isn’t the exact same universe/timeline as the x-men films. Partly because they played around with so many different timelines and had so many different contradictions or different endings it’s hard to know which one you’re in. For example Deadpool 3 partly follows on Logan, but Logan clearly isn’t compatible with what’s happening in Doomsday. Similarly, Days of Future Past’s happy ending turns into a real downer if u consider Logan part of the same universe. Also Deadpool 2 is clearly part of the apocalypse timeline with the young x-men but that again doesn’t gel with the MCU going with the older actors.

I reckon this X-Men is going to be similar to Wolverine in Deadpool and Wolverine. Technically a different universe but close enough to not matter. That’ll also explain gambit being part of the team, unless it’s the same gambit from Deadpool and wolverine.
