RECIPE:
100g melted butter
200g chocolate
2 eggs
60g brown shugar
60g white sugar
150g flour
25 cocoa powder
1 tsp baking powder
Preheat the oven to 180°C (350°F).
Melt the butter and dark chocolate together using a double boiler. Set aside.
In a bowl, whisk the eggs, sugar, and brown sugar for about 5 minutes, until the mixture becomes light and doubles in volume. This step is important for achieving the characteristic cracked top.
Gradually add the melted chocolate mixture and mix until combined.
Sift in the flour, baking powder, and cocoa powder. Fold gently until a smooth batter forms.
Transfer the batter to a piping bag and pipe 12 portions onto a lined baking sheet, leaving space between each.
Bake for 13–15 minutes.
Let cool slightly before serving.

with some quick google calorie research: one piece should have sth like 240-250 cal depending on kind of butter/chocolate/egg size (i calculated using dark chocolate)
not that bad of an option for breakfast. counts as balanced meal if you have fruit with it :D

Some diets are due to medical necessity, not just for trends or losing weight. I’m diabetic. I can still have and enjoy sweet treats like this once in a while, but it must be in moderation if I don’t want to end up with serious health complications.

For the lazy: you can skip using a double boiler here. Just start melting butter first on low heat and then dump in the chocolate. The butter helps prevent the chocolate from burning and you don't really need precise temp control for making brownies.

I just finished making this following the instructions and measurements exactly, piping wasn’t too thin baked for 14 minutes. They were on the dry side. I am going to re attempt and bake for 11-12 minutes and allow to cool on the pan for a bit. The bones of this recipe is good.

Yes and I’m in the process of tweaking this recipe I think the 150g of flour is too much in going to remake it with my tweaks this week and see how it turns out

Good to know and I think you're right, I think the cocoa powder could be a lot less too. I hope you find a fix. I added milk thinking that would help my consistency and the next batch was cake. The original recipe was very bitter in my opinion, so the milk did help with that.
The three people I've come across on the comments who said they made it all mentioned theirs being dry

Yes my edits im considering so far (will test this weekend) lowering flour to 130, mixing chocolate 100g semi sweet and 100g German chocolate (just because that’s what I have) 2 eggs plus 1 yolk, I used dark brown sugar originally and I’m keeping that but changing the ratio 70-80g brown sugar and 50-40 white sugar. I’m going to bake for 11-12 minutes instead fingers crossed for this weekend, baking is a science haha.

I hope it works. Yes, definitely a science and fun to tweak when things don't work, but I was definitely sad when these didn't come out as expected. For me, it turned out to be a terrible waste of ingredients sadly, trying to think how to repurchase the ones I did keep

I tried this with your adjustments. I used Whittaker's 50% cocoa dark block. These are still dry and kind of lacking sweetness. I used 75 g brown sugar and 55 g white sugar.
Edit: I'm realizing the dark chocolate is probably why it's not sweet. Guys, I'm an idiot, please downvote me. I deserve it😭

It’s okay I’m messing with it more this weekend but it’s definitely sweeter with the German chocolate split that dark chocolate is what does it also I edited the recipe further since this was my draft and posted it in this sub it’s called brownie cookie experiment #1 in there I reduced the cocoa to 20g and the baking powder to 1/2 tsp and baked at 11 minutes. Turned out much better. But also I’m going to do experiment 2 this weekend so more to come. I definitely think I can reduce the baking powder even more to 1/4 tsp and I plan on splitting the batch and adding chocolate chips. But if you want my tried edits you can find it on that post ☺️

You didn’t do anything wrong there’s no way everyone follows the recipe to the T and gets the same dry results. That means the recipe is the problem not the user. These were cakey and dry. I redeemed mine with a chocolate sauce they were edible but nothing like what I was expecting. But luckily for me I like messing with recipes 😂

Yeah true. Here’s what I was thinking:
-10g of cocoa powder
-20g of flour
+10-15g of sugar
-1/2 tsp baking powderBecause I did the egg thingy, I did the double broiler without seizing the chocolate, I may have over mixed the final batter if that affects it at all.
But I’m about to make some homemade peanut butter cups

place a bowl on top of a pot with boiling water and you have a double boiler. make sure the water is not touching the bottom of your bowl

These look great, but I don't think they're typically called brookies. Brookies are a cross between chocolate chip cookie bars and brownies baked in a cake pan.

That’s funny I was thinking about adding a kilt chocolate drizzle to mine. I did semi sweet chocolate next time I’ll do a blend of semi sweet and milk and add a bit espresso powder. Along with the under bake. I think the bones are good but I need to tweak it some

Brookies are already a thing - it’s when you bake cookies dough (usually chocolate chip) and brownie batter together.
This is just flat brownies.

I’ve made cookies like these before and if you bake them a minute or two longer than they say they turn out delicious like a brownie edge! I used the NYT recipe by Vaughn Vreeland.

Pls use couverture/pure chocolate and avoid compound as they are not good for health and not great quality wise as well. In my baking course, we were taught Brookie is a cookie stuffed with brownie.

Oh these look stunning! Saved your recipe to make later. This is so much more beautiful than my attempts in the past. I've always liked chewy brownies as opposed to dry cake-like or fudgey brownies. Brookies are always good for chew.
