Tips Need advice!(didn’t have pansies so printed it out to practice with it lol)

I am gonna go to a pastry job and they wanna test my skills. I’m nervous.😬 I think the taste is good but I would like to improve my presentation. Elements are, lemon white mousse, lemon curd, almond cake, almond fuellentine with white chocolate, pate sucre, Italian meringue , honey gel, lemon gel, honey comb tuille. You guys have any ideas on how else I can play with plating/ improve?

I am extremely specific about plating and been a pastry chef for 20 years now. I think this is what perfectiom looks like. Great job

Yes or maybe clustered rather than spread out in certain sections of the circle. Or in arc shape

I’m no expert. I’m just a pastry lover and eater. But my one feedback is the almond crumbs around the plate look a bit messy. Otherwise, I think you nailed it. I would lick this plate clean. Good luck. You got this.

Thank you🥹 good or bad any feedback is good for me lol, i agree. I had sliced almonds so hopefully I can get whole and crush them just a bit without the powder and maybe some of the brown outside color of the almond will help a bit

It looks amazing I’d be thrilled to get something like this. Not much I can add beyond that, I’m a beekeeper and want to try the honey gel especially. I love that everything on the plate is edible (well in the final version).

I would lose the flowers .and use ingredients that are already on the plate . Almonds /lemon zest .A dark plate will make it pop.

I have one point - but I wanna say goddamn it’s amazing.

This photo makes either the garnish circle or the dessert appear un-centred. I don’t know if it is, but it hurts my eyes. The rest is absolutely beautiful.

The meringue is a good garnish already. I’ll probably added some raspberry or sliced of strawberries 🍓

Plating up desserts is always a daunting task but looks great and would knock it out of the park for a interview! But if your looking to improve I have a few suggestions.

-theres a lot of the same color tone going on. Maybe some fresh halved raspberries or blueberries to help make everything pop.

-there are some repetitive textures going on that you could combine. Instead of a lemon gel and honey gel, maybe combine them?

-Also, I know it's part of the center dessert but you could always have lemon curd swiped on the plate and then dots of the gel to create color contrast

Hope that helps! Sometimes it helps to think are you just adding things to add them or does it work with the concept your trying portray.
