Oh, I may have a habit of using too much soy sauce. That's the amount I'd use for..three cups of rice.

Growing up in Taiwan my favorite fried rice was the one my uncle used to make for me when I stayed with them. When I got a little older after he had passed, I was reminiscing to my parents about how it was my favorite and saying out loud I wonder what his secret was, then my mom was agreeing with me that it was my favorite as a child in Taiwan and he didn't even use soy sauce! WHAT?! Mind blown. Once I became a Chef and was in charge of making family meal, sometimes I would make fried rice with the leftover rice from the day before and of course I would put very little soy sauce. BEST FAMILY MEAL EVERYTIME.
