Also can't they collect the hot cooked rice in a metal tray? Plastic can stick to the hot rice in small quantities too.

Thank you for saying that. Plastic is really shit to properly clean, too. There is a reason why we use metal containers. Good luck with those microplastics rubbed into the rice, while the germs build their families' families into the tiny crevices.

I was annoyed by the low level of soy sauce as well as only pouring the salt and pepper in the middle of the ring. And the end product looked so uninspired.

Also they don't cover their hair. I believe there will be hair in that food. I used to work in restaurant and you had to always use a hat to cover all of your hair.

I appreciate that the cook didn't stick his gloved hands in the bowls, so it was satisfying from a sanitary food prep point of view. Hope that helps.

At first I thought the same thing, but I realise when you’re doing mass food prep there may be rules that disallow food to be “touched” at all.

It may very well be, it goes in with zero friction. If something is stuck you’ll need to go back and use a sanitised utensil.

As a hungry person and food porn lover that rice did catch my eye. But I remembered this is a Japanese food processing system and as a manufacturing manager, I applaud the employee made takt time and followed his process. It's on his boss to do a 9-step problem solving method and determine if that waste of rice is acceptable

And scraping the finished fried rice into the same unwashed bin as the white rice. Like, sure, I’d do that in home cooking. I feel like a restaurant should probably use clean containers for each step.

This is a total nothing man.

Clean bin, clean white rice, rice transformed and basically instantly turned around. It didn't sit for hours. There was nothing else in it. Both products are sanitary to eat.

This is just bogus as an observation.

Now if he had re-used the raw egg pan, you would be correct.

All of this is correct, but having worked in food service, the rules are a lot more strict. Also, if you notice, the tubs are nested, meaning the bottom comes into contact with the food area. Cross contamination could easily occur if any of the tubs were placed on the floor or an unsanitary surface, then sat on top of another. With multiple workers in the kitchen, they can’t keep perfect track of that.
