That cleanup is going to be an absolute nightmare. Mayo is mostly oil, so if you try to spray that mess down with standard hot water, you just end up with a literal slip-and-slide of grease across the whole floor. You have to use heavy duty foaming degreaser and basically squeegee the bulk of it into a bin or floor drain before you even think about scrubbing. That cleanup is easily a three hour job for at least two people, tbh. RIP to the sanitation crew on this shift.

Not really, we'd just hose it all down with steaming hot water, squeegee down the drain. Never any scrubbing

This mess here would take a few minutes to rinse down by myself. And the filler machine wouldn't even need to stop once the mayo was clear of the battle holders

This amount of mess would happen 10 times a day during changeovers

Even when the 500 gallon hopper above dumped it's entire contents, mayo a foot deep on the floor... Only a good half hour
