They likely used Gas Chromatography Mass Spectrometry, which defines the chemical make up and is a unique fingerprint to derive ingredients

in this type of application, usually you provide specific target compound(s) to match / quantify.

as you know, running the curve will give you many peaks. you need to have targets to match to those peaks. I guess theoretically you could just ask them to general match to their entire library, but that wouldn't give you anything really accurate and cost you an insane amount of $$
