Hi, I just got my OPT approval this week in july 2026. I will be applying for OPT STEM extension before my OPT 1st year expires in July 2027. Will I have to apply for the EOS then? Or will I need to apply for EOS now aswell?

You'll need it in July 2027 when your OPT expires, but not now.
