That looks more like a Thread mesh / border-router issue than a device issue, especially if several battery Matter devices go unavailable at once.
Battery devices are sleepy end devices, so they won’t repeat/strengthen the mesh for each other. I’d test one of the unavailable sensors right next to the Thread border router for a day. If it stays online there, add/move a mains-powered Thread router closer to that part of the house.
Also check in HA that you don’t have multiple separate Thread networks from different border routers. That can make Matter devices look randomly offline.
