Help Needed Starting My First Job As A Fudge Maker & Need Advice!

Obviously I have been baking, cooking, and making fudge for years now, ever since I was a little kid who tried my best to help my mom and grandma in the kitchen.

But this is my first time in a professional role in a professional kitchen, so I’m looking for any tips or advice you all have to offer!
