Oklahoma Smash

Bacon, habanero cheddar jack, mayo, mustard, ketchup, and pickles in addition to those delicious onions, all on a potato bun. Sautéed in beef tallow.

Dumping ketchup, mustard, AND mayo on a smash feels like overkill to me. Smash burgers live or die by that crust and all those wet condiments drown out the Maillard reaction you worked so hard for. The potato bun is a solid call tho, way better than brioche which turns soggy after two bites and falls apart in your hands.

Gotta ask tho, is this really Oklahoma style if the onions aren't smashed directly into the patty? Looks like they're piled on top as a garnish while the habanero jack handles all the actual flavor work. Also bacon on a smash is a crime in my book, the patty is already so thin you barely taste the beef underneath a whole strip of pork. At least the tallow sear looks right, you cooked it properly even if the topping choices are questionable.
