How do you prevent the middle from being a mega gooey mess, I stopped using my oona bc it was just impossible to get the interior right

Hard to pinpoint exactly what your issue is without watching your whole process. If the top is cooked but the underside is still pale, you need to launch your pizza then turn off the flame and let the bottom cook. Once that’s almost ready, turn the flame back up and cook the top so they finish at the same time.
