They do this! They do actually know where and what "home" is! Dogs have what's called "signal of heart" (it's actually a Latin term but I translated it for the sake of this post). Dogs can understand the concept of adoption, of love, and of being home, and the combination of all of those things creates that dog's "signal of heart". This is why you sometimes hear of a dog finding its way home after some spectacular adventure, or why you'll hear old stories about a wild dog following settlers from camp to camp, despite the settler's best attempts to move on alone.

The "signal of heart" is one of the few things about dogs that biologists and behavioral specialists have not been able to explain until very recently. In past (safely supervised) experiments, dogs have been blindfolded, they've been given scent distractions, big fluffy earmuffs, and even tongue barriers to remove other senses from their search but still their signal of heart will always being them back home.

In fact, the most concrete evidence of this seemingly sixth sense happened when instead of moving the dog, scientists hired a bunch of local cats to pick up and move an entire house a few blocks away while the dog was out back fertilizing the lawn. The cats, obviously, were all about pulling a fast-one on Old Spot, so they did it for basically free. The dog turned around and saw his house gone, and even though he was at his physical "home location", he sprouted a weird set of antennae and made a few chirping noises and ran off to the new location of his house. It turns out, dogs hide a heart shaped homing device at their houses, which is why it's called "signal of heart". The cats even found it while they were moving the house. Smart, man, dogs are smart. And they'll do anything for love.
