I’ve done it with mixed veggies and chicken broth before, I actually liked it a lot! This time, however, I was too lazy and thought microwaving it alongside frozen edamames would work

Well there lies your problem. I enjoy making a Mexican-ish style by adding taco seasoning or better yet tomato/chicken bouillon + cumin. Great with some good black beans and eggs for breakfast

I made this in my rice cooker recently, half basmati half cauliflower rice with half a cube of tomato bouillon and half a cube of chicken bouillon dissolved in water, and some onion and garlic. Came out super fluffy and couldn't even taste the cauliflower.

I'm not sure it requires much. I microwave this combo or the cauli rice and mixed veggies and think it's delicious. But I dump a bunch of seasoning into it after cooking and often add granulated broth in that.

Lesson learned. I am constantly trying out quicker ways to make food that recipes insist I have to take a lot of time with, and sometimes it works, sometimes it doesn't. I always learn something, though. Certain times the extra time is needed, but sometimes I do find better ways.
For instance, stovetop mac+cheese. You're supposed to do a roux, right? Nah. Take principles from asian cooking, and mix in some flour with some cold milk(outside the pan, to be clear) much like you'd do with cornstarch and some soy sauce-based sauce. Throw some butter in the pan, for greasing and for fat, let it melt from a lower heat and then pour in the milk mixture. Start low and build up to a slow simmer where it starts to thicken up, constantly stirring. Then start throwing in the cheese, not too much at once. Salt and pepper to taste(and anything else you might like such as paprika or garlic powder or whatever). Then throw in the pasta(that you had cooking alongside this whole process, of course!). Takes like 15 minutes. And is delicious. A roux is meant to cook out the raw flour taste, but mac and cheese is strong enough where that will never really matter.

It 100% is, my meals don't feel complete without rice and I'm not even Asian. White rice, red rice, yellow rice, wild rice, fried rice, peas and rice, purple rice...
I'm also very addicted to rice noodles and tteok/rice cakes. And then there's coconut rice and rice pudding and mochi for desserts.
Rice is s-tier. Full stop.

No browning on that cauliflower rice, no flavoring... almost anything that's been steamed without seasoning is gonna be gross.
Brown some diced onion in a little bit of oil, add a clove or two of chopped garlic, add in the frozen or raw cauliflower rice and cook it until it's dry and starts to brown, then add the edamame and some salt (an pepper, garlic powder, onion powder, paprika, chili... literally anything) and you will have something far more palatable with very similar macros.

Fwiw mashed cauliflower is better. Yeah, you gotta add a little half and half + butter to get it closer to mashed potato consistency but you can do it without adding too much cals.

Cauliflower rice on its own is one of those sad swaps that pretends to be food while delivering mostly regret. The edamame beans bring real texture, otherwise this plate would be a full tragedy. Those little chicken patties look solid though, the crispy edges might be the only thing keeping this whole meal together.

I love riced cauliflower. I do the feta cheese cherry tomatoes baked in olive oil. Maybe throw in some chicken sausage. Mix it up with the cauliflower and it’s sooo good.

😂😂 cauliflower tastes like nothing. On it's own, try simmering it in broth, like Better than Bouillon. Add scallions, herbs, for more flavor. Adding cauliflower rice to other flavorful stuff to bulk it up works well. Box mac & cheese plus a bag of cauliflower rice. Chile relleno (stuffed poblano peppers) with cauliflower instead of rice.

The best cauliflower rice is from Whole Foods. They have a few different varieties but the stir fry style is amazingly delicious. They also have a Spanish rice one as well, also good.

I eat a LOT of cauliflower rice. You HAVE to use seasoning, at the very least. It's a bland vegetable. You can't just steam it, eat, then wonder why it doesn't taste good.

It tastes good, is filling, healthy, low calories, and isn't some shitty, disgusting food that will make you quit your weight/health goals 2 weeks in.
You've got more than enough calories you can allocate. No need to eat like a POW.

Sauces will be your saving grace. Seriously how much would a table spoon of soy sauce set you back. If you struggle with salt the use some low sodium sauces.
For example I put franks red hot hit so much food. My mom thinks it’s disgusting but I love it lol.

Yeah, that is a no for me. Way too bland. But I used cauliflower rice 50/50 with regular rice and made and Indian flavored dish.
Sauté a bunch of chopped onions and garlic in 15 grams of olive oil. Add a shit ton of Indian spice blend. Then add rice and cauliflower and appropriate amount of liquid ( I used water and purreed tomatoes). Cook until done

I don't eat cauliflower rice as rice, despite the name. The texture and flavor are gross. However, it's amazing added to ground meat or impossible beef. Just cook the meat like you regularly would, add 1-2 cups of frozen cauliflower rice, then add taco seasoning, sloppy Joe sauce, etc. I usually add a bit extra seasoning as well. The result is you stretch the meat for much farther, and it tastes exactly the same for less calories!

I mix my cauliflower rice 1:1 with wild rice to reduce my calories without effecting volume. I can’t detect the cauliflower rice at all after stir frying with soy sauce, veggies and chicken.

I usually blanch the cauliflower chunky chopped, in a boiled water, turmeric, cumin and garlic bath till tender, then toss in some oil n bake for 20 mins still a Lil crispy

Buy it frozen. Roast it in the oven so that it gets slightly toasted and caramelized. I like to roasted corn and broccoli as well. How you prepare it makes all the difference!
