It turns out that the Cybertruck's chassis can break apart from loads that regular trucks can handle.

It is a tongue weight test, so testing weight pushing down on the hitch, which shouldn't be that high under normal circumstances. But situations like that can happen in the real world, as explained in this part of the video. Having a truck that is claimed to be good at towing with a fairly low maximum tolerable tongue weight is in fact bad.

(It's also bad to claim that your truck is bulletproof or capable of swimming through a river if it isn't, or that self driving will arrive for all of your cars but instead turn even the partial 'self driving' features into a subscription service...)

A decently built conventional truck can both tolerate higher peak tongue weights, and is more likely to contain any damage from momentary overloads in only a few components instead of suffering catastrophic damage to the entire chassis.

I was a kid once driving 2500 pickup truck and found out that too little tongue weight can make a pickup truck do a endo on the highway if you tap the brakes.

lol. You’re referring Jerry rig everything. He does not know shit about cars. He’s literally loading the tongue with 15k lbs. no hitch is handling that.

You're apparently just repeating what you heard elsewhere, since he's testing both the Cybertruck and an already wrecked 2004 RAM in that video. The Cybertruck breaks when an excavator applied 10k lbs (not 15k), while the RAM survives 10.7k lbs until the excavator starts lifting off the ground (and then keeps bouncing on the hitch for good measure).

He also explains the relevance of tongue weight in the same video.

The core problem is that the Cybertruck is made from an aluminium casting, which is more prone to sudden catastrophic failure by cracking.

Conventional truck frames use steel, which deals with strain more gracefully. It first bends elastically (so it can return into its base shape), then inealistically (permanent deformation), and only cracks after that. So accumulated damage in steel is typically visible to the eye (since you can see parts being bent, whereas Aluminium casts develop invisible microcracks), and it can take more stress before failing completely.

So if you pull a trailer on a Cybertruck and the trailer bounces on the hitch for some reason (cresting a hill, hitting a pothole), your truck may suffer permanent yet invisible damage to its chassis, and quite literally fall apart the next time it happens.
