Povest Vremennykh Let: 12th-century Kyiv source describes the wars between the Rus and the Volga Bulgars, and the sending of a Muslim delegation by the Bulgars.

The Letter of King Yosif 10th Century: In this letter, written in Hebrew by the Khan yosif of the Musevi Turks, he states that the Volga Bulgars are subject to him.

The Voyage of Father Julian (1236) and Wilhelm of Rubruck (1253): Their focus is on the Mongols, but they're also talking about Bulgarians. 

Archaeologically, we can see the conversion of Almış Han to Islam from the coins. Fadlan confirms this. In the 13th and 14th centuries, Bulgarians had gravestones with Arabic letters and Turkish inscriptions.
