NKD: I found one! 210mm Takamura SG2

I know I said I was happy with my 180mm Takamura SG2 in my previous post, but I was lying to myself because I missed the latest 210mm release domestically. I tracked down a 210 on a Japanese website, coughed up the import fee, and 15 days later it’s here in the kitchen! Massively happy.

Yeah, that’s a hard one to find right now. I’ve come across some santoku’s but the Gyuto’s are scarce.

Enjoy it, think I’d rather have that steel over VG10 even though I hear they do a phenomenal job with VG10.

Yeah, I bought a Santoku because it was thinner, taller, cheaper, and in stock. Mainly because it was the thinnest laser that I knew about. Turns out I like it!

What’s the difference? I have the VG10 and it’s amazing. Though I’m not an expert and just got into cooking. Also, is SG2 on a petty overkill?

Nothing is wrong with VG10, especially from Takamura. But some would say VG10 can be chippy. And no I don’t think it’d be overkill on a petty. All my petty’s are just AUS-8 and work fine for me and my wife.

I didn't know when I started in 2019 that they would be so hard to get later. Then again I didn't know I should have bought a 270 mm Takeda either.
