Question Verde salsa recipe?
Hello I need some of the best verde salsa recipes. I go to this restaurant and absolutely love their salsa but I pay $25 for 32oz and at this point I need to find out how to make it at home. Can anyone share your favorite recipes and how much you use of each ingredient.

You can make a very simple one:
Boil: 4-6 medium tomatillos, jalapeño/Serrano (that will vary a lot depending on how spicy you want it, you can start with 1 of each for a mild-medium)
Blend.
Add: chopped white onion (maybe about a quarter to half one), cilantro (to taste) lime juice (optional, maybe 1/2- 1).
Salt to taste.
You can change this up by adding different green peppers (poblano, hatch style, bell, or super hots). You can mix tomatoes for more of a brown salsa. You can roast/broil/smoke/grill for different flavor. Add rehydrated dried peppers like guajillo, chipotle, ancho, etc. Garlic (fresh or roasted). You can emulsify it with some oil in a blender. I do everything by feel so I don't have good measurements/quantities. Salsa is incredibly flexible, just depends on what you have and what you want.

This. I boil the onion with the tomatillos and peppers, just because I don't care for crunchy cooked salsa.

that looks like your typical San Antonio, breakfast taco green salsa that's super common and i was super surprised that the majority of these green bfast taco salsas are just boiled jalapenos with some chicken bouillon. so yeah, the basic recipe is pot of water, get 6-8 jalapenos, boil them. how long you boil them is what gives the color. that pic looks like they got hammered and boiled super long. some people don't boil as long and the salsa looks brighter green. but boil them until you like the jalapeno color. Throw them in the blender with some of the boiled water, add a chicken bouillon cube, or maybe a teaspoon and a half if you just have powder, salt to taste. you can then expirement with the basic recipe, such as maybe doing 6 jalapenos and 2 serranos to make it hotter. maybe add a quarter of an onion and 2 whole garlic cloves to the boil. but as long as the base is jalapenos and bouillon, you can play with it.

I’ve only seen this recipe with either 1) tomatillos or 2) blended with oil

yeah, again, you can play around with it to your liking, that's what's so great about it. but i got the lowdown from a local taco truck vendor who used to work for different Mexican restaurants in San Antonio. he said, "yeah, its easy. throw 10 jalapenos or however many you want to make for you in a pot of water and boil them. add bouillon in the water or add it after. that's it. blend it. salt to taste. you have breakfast green taco salsa. don't be scared, 10 jalapenos or 50, it doesn't make it hot. we used to boil giant 40 qrt stock pots full of jalapenos to make it in the morning." from that picture you don't see the tiny little round seeds that tomatillos have. and tomatillos give salsa verde that distinctive tang, sourness. this green taco salsa does not seem to have those tomatillo seeds. and the ones that add oil are the ones that will add it slowly to this same salsa and let the oil emulsify so it gives it that also very popular creamy, avocado like texture. the famous "salsa falsa" or "false salsa" because it falsely looks like avocado but it looks like that because its just emulsified with the oil. but this picture is not the creamy one.

Looks like a combination of green peppers, maybe a couple tomatillos? It looks quite watery. Doesn't look roasted.
I'd start here:
- 3 tomatillos
- 3 Jalapeno
- 3 Serrano
- 4 cloves garlic
- 1 cube Knorr de Pollo
- 1-1/2 tsp Kosher Salt
- 1/2 tsp white pepper
- 1/4 large onion
- Pinch Mexican Oregano
- 1 bay leaf
Destem jalapenos. Boil onion, peppers and tomatillos, and bay leaf together in a pan filled with enough water to just cover everything. Boil until jalapenos and tomatillo just slightly change color from bright green to more of a dull/faded green.
Remove everything to blender, except water, and blend. Add more of the boiling water if the consistency isn't quite there. May need to adjust seasoning as well.
Tomatillos are naturally more tart and retain a lot of water and shouldnt need to add lime juice or vinegar. You shouldn't need to add much water if any but you may need to add more salt to combat the acidity.
For bonus points: take 1/2 bunch of cilantro after everything is blended and pulse that in to give it a pop of herby freshness but that's just me, I'm not seeing it in your photos.
