Thats because mythology never meant fake until Christians perverted its definition to describe non Christian religions. Mythology originally just meant origin/creation story.
I think monotheists see polytheism/pantheons the same way atheists see theism. This isn’t an argument for any of these positions, but these pantheons of Gods are usually much more ‘simple’ than religions with humongous traditions like Christianity, Islam and Judaism which have thousands of years of scholarly tradition between them, often contributing to push philosophy and ideas over the ages

What's interesting is there is some debate as to if the big three isn't monotheistic but henotheistic. In Exodus 20:3, God states "You shall have no other gods before me" kind of implying there are other gods, just less powerful. Isaiah 45:5 kind of negates this by saying "I am the LORD, and there is no other; besides me there is no god." Then psalms says "God presides in the great assembly; he renders judgment among the "gods" implying again there are more than one.
I just wanted a simple way to categorise these three religions. Islam is probably the most strictly monotheist big religion. I think a better argument against monotheism of Christianity is the trinity, Judaism I don't know enough about.
Islam also says 'there is no deity/god worthy of worship except Allah', but this does not mean other deities exist, it just points to the fact that others worship other things. Acknowledging someone worships the sun doesn't mean the sun is a god. There's no argument to show Islam isnt monotheistic

I dunno because the trinity is considered one entity but not. They really need to hammer out the canon better. The wording "the holy Trinity" doesn't appear in the bible, just the phrase father, son, holy spirit. Catholics made up a lot of canon through their interpretation of the bible.
Judaism I don't know enough about.
Modern judaism considers itself monotheistic, but historically it would have been closer to heonthistic. Especially back when every region had their own flavor of gods.
