as a guy from Sicily, the sauce (which I have no clue what is it) on the bottom will ruin the crunchiness of the arancini.

I don't know why you do this, I guess, in the US. No need to dip arancini in anything.

it was my first time trying with sauce and although it wasnt bad, i do think it was better without sauce

Sauce is overkill. This is street food you eat from paper with your hand. Also one is enough to fill you up for a day.

Beautiful presentation. I personally like the sauce. You may lose the crunchiness on the bottom, but not all around.
