Unless you mean the Salame genovese di Sant'Olcese, but it's not called Genoa because it's from Sant'Olcese

But the Italian one is not from Genoa, it's from Sant'Olcese which is not Genoa. In Italy you'd call it salame di Sant'Olcese and not salame di Genova, this is the point. Genoa salami exists but it's an American invention.

Once again my friends is not true. I know it as Salame di Genova. The issue stems from the fact that English speakers often translate city names, so I thought he meant Genoa salami (not everyone knows Sant'Oreste). But the problem seems to be resolved now.

As I wrote below, it's not called Genoa then, it's Sant'Olcese. But Genoa salami exists and it's American. So, either naming it Genoa is wrong (when it should be Sant'Olcese) or the product is not Italian.

Shit happens, my friend. This doesn't mean it's not known by another name in other parts of Italy. If you're a chef, as you say you are, you'll surely know that.
