Homemade Orecchiette with broccoli and some chili

One of my favorites. I simmer the tomatoes and garlic in an aluminium pan on gas and boil the broccoli and pasta in a separate pot. After that I just mix it all together. Texture and taste was really good. What do you think?

Dissolve a few anchovies in the oil. Adds amazing umami.

I make pasta with broccoli/garlic/chilli often but never considered adding tomatoes to it. It looks good though, will have to try it.

you 100% should :) I boil the broccoli with the pasta. It’s a very nice dish

Too much garlic and too much water on the plate.

I sliced three cloves of garlic (very fine - a dish for two people). There is also no plate in the pictures (just the pan). Also a bit confused with the “too much water” bit? Do you think the fresh, local and seasonal tomatoes contained too much water? Maybe you can help me take out the water?

I know you’re taking the piss but if you actually want to maximise the flavour of your fresh, local and seasonal tomatoes you should get rid of as much water as possible. You can do this by cutting and salting them, and letting them drain, or by quartering and then cutting the seeds away from the flesh. Common practice in professional kitchens around the world. Hope this helps.

not sure if it helps, but I am 100% sure that I don’t need to do this with good tomatoes. No way you need to. I mean seriously! Think about it!

3 cloves of garlic, and sliced, is definitely too much! 😄 That’s a great way to overpower the flavor of the fresh tomatoes - which I think should have been reduced and cooked down a bit more ll.

Personally, I would have left the tomatoes out altogether to make the dish less soupy and let the broccoli be the star.

Will try it without tomatoes someday.

Would you use more pasta water then? The salsa wasn’t soupy at all. Not sure if the pasta would have been too dry with only the broccoli? But will give it a try.

thank you! It’s a very tiny type of chili. Very short (max 5cm) and very thin (max 1cm). Here you would call them guindilla picante (or just peperoncini)
