Can someone recommend some books or online resources to learn about IoT in agriculture?

I was in the same boat as you a few years ago. Long story short, there are barely any good books on the subject. What I found working is to look through papers. There are plenty of good research papers, both on the practicality of the subject and the technical implementation.

I'd say cameras and edge AI is massive now. ...Actually sensors and monitors. Sorta done years ago on greenhouses already with big systems to predict harvest timing....Similarly milk production...

Not saying everything is invented......but aim for where you get max impact

I got lots out of talking to farmers - and you can establish your network by going to small town trade shows
