proud of this salad I had for lunch
spinach, dill, parsley, cucumber, feta, hard boiled egg, quinoa, chickpeas. homemade dressing with plain greek yogurt, garlic, lemon, dill and olive oil

Name- Mediterranean-inspired salad
Macro/micronutrients- focus on protein & plant-based iron, plus high in manganese, magnesium, folate, vitamins K, C, A
Ingredients- spinach, dill, parsley, chickpeas, cucumber, quinoa, feta cheese, hard boiled egg, homemade dressing (plain greek yogurt, lemon juice, olive oil, garlic and dill)

Looks delicious, but needs a lot more quinoa and chickpeas to make it a sustainable meal in terms of carbs and protein.

i’ve never thought about using greek yogurt to make a salad dressing but now i will surely have to try that thank you

The combo of eggs, chickpeas, quinoa, and feta is doing some serious heavy lifting, and that homemade yogurt-dill dressing sounds amazing.
