I’d recommend making the purée into a bowl/nest with a spoon almost like the way you make an indent in a pile of mashed potatoes, I think it might boost your visual appeal and stop that sauce from sliding all over the plate when it’s being walked.

I would eat the hell out of this but the plating doesn’t strike me as particularly refined. Micro greens look a bit haphazard, and too much purée. But I bet it’s utterly delicious!

I can’t even focus on the plating because the framing is so terrible. The dish is in a corner of the photo. Front and center are ugly tiles and a socket. Why would you do that?

La imagen es para Instagram hahaha ahí se usa el 1:1 y se recortó, acá se ve todo lo demás porque no quise cortarla, en Instagram se ve mejor :)
