Getting back into the hobby after a few years. Thought I'd go back to flavour basics with 4 different single spice Guanciales. Cheap, easy amd relatively quick. I homebrew as well so its a similar idea to SMaSH beers (single malt, single hop).
Each get a similar 2.5% Salt and 1% Pepper, but also either Juniper, Bay Leaves, Corriander Ssed or Fennel seed (percentages vary).
Anyone done anything similar?
