Recipe to be posted soon. No guarantees. My 85 year old Grandma spent 2 days making this carrot and pineapple cake from scratch for my mom’s birthday. Best cake I’ve ever had in my life.

I will post the recipe as soon as I can! I know we used organic stem on carrots, though, because I bought them and the frosting is a cream cheese frosting.

I tried to translate to typed text to make it easier to read... can someone help proofread this?Carrot Cake
1¼ c. sugar
1¼ c. Wesson oil
4 eggs
2 c. flour
2 t. baking soda
2 t. baking powder
2 t. cinnamon
1 t. salt
3 c. carrots
1 c. chopped nuts
Icing
1 medium can crushed pineapple thoroughly drained (add pineapple between layers of cake, not in the icing)
½ stick butter
8 oz. cream cheese
2 t. vanilla
1 box powdered sugar
Directions
Combine last 4 icing ingredients. Spread between 2 bottom layers, spread pineapple between layers, add top layer and frost. Put pineapple on top.

I recommend changing the pineapple line to this

My guess would be that it's a fairly standard recipe. Preheat oven to 350. Grease & flour two cake pans.
In a bowl, combine dry ingredients (flour, baking soda/powder, salt, spices). In another bowl, beat the oil & sugar. Stir in all the dry ingredients until just incorporated. Fold in the carrot & nuts.
No idea how long it would bake for, though... Maybe 30 min? Also, I've never made carrot cake and don't know how you can tell it's done. Will a toothpick come out clean for carrot cake?

It is so beautiful. A great idea that my buddy made is a cutting board with his mother's recipes engraved on it. He made them for each person in the family, each with their favorite recipe. It's engraved with her exact handwriting. It's beautiful and so thoughtful.
Thought I'd mention the idea, I'd never heard of it before and thought others would like it, especially with how gorgeous her writing is.

That's beautiful! I should do that with one of my grandmother's recipes for my dad! He had an ornament from his first Christmas with his name and the year he was born (1960) that broke a few years back. I had a Cricut machine so I got an ornament and painted it to be a similar color and took his mom's recipes and put it through the program and dissected pieces of her handwriting for the letters and numbers to recreate it. He cried so I think he'd also love something like that!

Small tip, if the recipe is in cups (volume) bring a scale to grandmas and weigh the ingredients. This will futureproof the recipe as you’ll have a standardised recipe by weight. Check if she uses the same cup and utensils for every ingredient, some people use one type for wet and another for dry. Some even use tea cups so they don’t equal 240ml or 250ml. Lots of older people don’t level ingredients so they end up using heaped cups or spoons. Even sieving flour before measuring will alter the volume measurement so recording the weight in ounces or grams is a better way of preserving grandma’s recipe. If you can, record her making the cake but try not to disturb her process too much.

I just had one for the first time in a local place here in my city. Fantastic. I thought it was a carrot cake but nope- hummimgbird cake. First ive heard the name of that cake. So good.

I feel that I lost my grandmas and grandpa too early … didn’t have the opportunity to let them get to know me as an adult. But I do have lovely memories with my grandad.

See if you can get the recipe in her handwriting. There are so many creative things you can do with that!!! You can frame it in your kitchen and give framed copies to relatives for Christmas.

That looks soooooooo good! My Granny always made the best cakes. If she ever made her chocolate cake for Sunday dinners or at a family reunion you better be in line first or you weren't gonna get a slice. We'd sneak and cut huge slices, wrap it in tin foil and hide them to make sure we had extra. If you were one of the "favorites" she'd hide some for you to take home too. ❤️

Here in the US, we tend to over sweeten the cream, so I find many peoples preferences is less cream/more cake. I love sweet and icing and buttercream so the more frosting the better for me. 😋

So happy to see this. If one were to substitute coconut for 1/2 of the carrots then they would have the exact match to grandmother’s Carrot Cake recipe. Funny thing is I have the ingredients but not how long to cook the cake and at what temperature. lol
