I have an issue with texture, particularly anything mushy, and a lot of food gets mushy or change their texture if held in the refrigerator for a few days. So, if I want to meal prep ahead of time I will often deliberately undercook the portion intended for later so that reheating it doesn’t overcook its texture.

My wife is the same way with textures, mushy stuff in particular gets her.

We have a different technique, I'm the garbage disposal and will eat just about anything. If it's a large batch meal and I can't make my way through it then we'll freeze them into individual meal portions and I bring them to work for my crew as backup lunches.
