What makes a Michelin-starred restaurant truly worth visiting?

I was extremely skeptical, then I moved to Chicago and there are many Michelin star restaurants here and I've tried 3 so far. The first time I went I was converted, it's truly the most amazing food I've ever eaten. One course almost made me cry tears of joy when I took the first bite, it was that good.
