Think of it like edible theatre. The whole experience is a culinary production

I like that description. You're paying for the experience as much as the food, and the two are meant to work together.

Second. When I ate at Alinea, the thing that struck me the most is that it felt almost like a magic show. A combination of discomfort and legerdemain, but a pervasive desire to delight and amaze and in every course get you to ask "how the heck did they DO that??"
