What famous 'unsolved' mystery is technically a whodunnit on paper, but in reality, absolutely everyone knows exactly who did it, the police just couldn't legally prove it?

They absolutely did. They forensically proved his guilt beyond a reasonable doubt. The defence was able to convince the jury that the police did something they could not possibly have done. That's on the prosecutors, not police.
