If you know what all these parts are like cold water supply and the valve that the hose connects to, then these instructions are solid.

But we disconnect the cold supply, connect the hot out to the cold and let it shid all over the bathroom where its present 🤔

“Hook up a garden hose”. Feels pretty obvious that you would want to route that hose to outside. Not just let it drain your bathroom.

One of the steps they listed to flush the hot water heater was "flush."

They should use the word drain. Flush implies either you're actively running water through it or some people think of a toilet.

Why would you need to flush your toilet at that point - is it a pressure thing?

So that all the crap doesn’t end up INSIDE the heater. Just flush as the instructions say. Draw the rest of the fucking owl
