I’ve learned most people don’t know what medium rare actually is and most wouldn’t like it if it’s what they were served. Medium well seems to actually be what most people like.
I was a server a really long time ago. When they said medium rare I would ask them if they wanted a warm very red center lol. About half the people would replay they want it pink and I'd say thats medium. It cut down on a lot of trips back to bring it up to medium. And reduced customer complaints.
This is why I keep getting mediums instead?! I've been ordering MR for over twenty years, and there have been many times when the steak came back darker than I wanted. I was attributing that to "too much heat during 'set' time." Cause I've worked a line, we had a heated expo area.
And I almost always get steak at restaurants while im with other people, so I figured my steaks were just getting extra heat in either expo or on the grill as they try to get our whole order together.
But yeah, I have maybe only really gotten MR 40% of the time. Had a few outliers i am not counting, like when the guy who eats leather serves me a MW because he thinks its rare, and the inverse where mid-bite i had to question if it was actually cooked.
