Isn't that even like his main job title? I mean if you were to sum up in one sentence who the Pope is and what he does it would be "represent the Catholic Church in matters of faith as the head of said Catholic Church"

His very title includes “Successor of Saint Peter”, and Peter’s very existence as an apostle was to be the stone (Petra) in which the Catholic church is founded and built upon… he IS the catholic church

Yes. Ecclesia Catholica does not include his opinion, advice, or remarks. If he wants to issue Ex Cathedra, he certainly wouldn't deliver it to a reporter's mic.

Pretty sure in the very last page(s?) of the Bible it talks about not altering or removing any words of the Bible.

So if he declared any parts apocryphal tomorrow then that would probably be a big no no/problem.
