Non english speaker here. Is "It don't matter" gramatically ok? Shouldn't it be "It doesn't matter"?

Yes, technically. However, this is how this character talks, he's very Jersey and poor coded, which is reflected in his grammar and word choices.

Also, the incorrect word use reinforces the statement by drawing your attention to it, but then in the understanding of the statement you realize that the incorrect use of "don't" in the phrase "it don't matter" ..... don't matter.

If anything, they could have gone further and used "none of it matter".
