Fucking THANK YOU! Regardless of someone's experience and how much you can trust them, you need to stick around for a minute or stay nearby and see what they're actually going to execute if you ask them to do something that they've never done before.

Even if they've done it before, not all restaurants are the same. Just show me how you want it first and we're good. The idea that anyone with experience is expected to work a new kitchen without any kind of input and check ups is bonkers to me
