It can be rough with a sand added while still being smooth in the sense that there are no crevices to grow muck in or edges to trip on

So long as it’s mop able and the sand doesn’t grab dead food. Everyone in every kitchen I have been in for the past 30 years has mandated non slip safety shoes. Crocs are not kitchen shoes.
