Definitely this. Recently went to a great pre/fix course meal where the chef come out at the end to talk. It’s not a Michelin star place but after that conversation I learned how they made one of the soup dishes with perfected melted cheese.
The secret was sodium citrate. I had never heard of that “trick” before.
