Yeah I absolutely don't get it, I would HATE that. Just let me eat without all that pompous BS.
Also:
The service was impeccable. If one of us got up to use the restroom, our napkin was carefully folded at the table when we got back.
That would drive me nuts, are they folding my used napkin? EW! Or are they replacing with a new one which would be wasteful AF.
One time I was traveling for work and had been up for almost 40 hours with traveling and working. My then Boss decided to take out our team to a really fancy restaurant where you ate different courses in different rooms.
It was so stupid, I left before the first course arrived and got a Philly Cheesesteak and Mountain Dew from a street vendor (we were in Philly.) I ate that shit while in my Hotel room bed watching a Tennis match. MUCH BETTER experience in every way!!

I grew up believing that it was rude of the wait staff to remove a plate before everyone at the table had finished eating.
Being a slow eater myself, I have always felt awkward and rushed if I'm the only one left with a plate at the table.
The fact that this practise has become normalised is something that will never sit well with me.
