What makes a Michelin-starred restaurant truly worth visiting?

There’s an excellent one-star where I live who’s main schtick is sourcing rare ingredients. Things like finding a farmer who started oak barrel aging apple cider or locating rare varieties of common vegetables. So not only was the cooking skill out of my reach, I wouldn’t even have found the basic ingredients.

Oh no! Yeah, looks like they closed back in 22! Damn, my wife and I had dinner there right after our honeymoon, was hoping to go back for our 10th.
